I hope everyone had a great Independence Day weekend. I ended up taking off on Thursday, giving Bart and me a long, 4-day weekend. While we didn’t do anything super exciting or earth-shattering, it turned out to be a really great opportunity to hang out, relax a bit, and also be productive in one of our last weeks before the baby comes.

Bart and I were stuck inside for a couple of days due to snow. While we managed to escape yesterday before going too stir crazy, I did find myself getting rather worn down with the constant barrage of winter. However, a snow day seemed like the perfect time to whip up one of my favorite breakfast recipes, oatmeal yogurt pancakes, which I’ve decided to share with you today.

Four-day weekend

Today was our first (and hopefully only) snow day of the winter. A big front came through last night dumping about five inches of snow at our house and closing the government for the day. Since yesterday was Presidents’ Day, that meant I had an impromptu four-day weekend. I might have enjoyed it more if it hadn’t been so cold, but hey, I’ll take it.

Winter defiance 2015

With a light snow falling and an impending epic blizzard approaching the east coast, it seems like the perfect time to take a quick tour of the little bit of greenery we’ve been enjoying in our house this winter. I tried overwintering some basil and parsley indoors after fall set in, but they succumbed to the winter blues quickly. However, we’ve had a bit of success with a few items, and they have provided a bright spot in an otherwise dull and dreary time of year.

It’s been an up and down week at the Taylor household. While other notable and exciting things have happened, those sort of got drowned out by the weather this week. I know it’s January and winter does have to happen, but that doesn’t make me excited about all the snow and cold we’ve been having.
